Get Cooking with Cream Cheese

Cream cheese has a rich, delicious flavor and smooth, creamy texture. Aside from the bagel topping we all know and love, cream cheese is also an ideal ingredient for chefs. Cream Cheese adds a bright, tangy flavor and silky, smooth texture to cheesecakes and cream cheese frosting. New York Style Cheesecake


5 oz. graham crackers or gingersnap cookies, broken into pieces
1/3 cup sugar
¼ teaspoon salt
4 tablespoons unsalted butter
Extra butter for buttering pan

2 ½ pounds cream cheese, room temperature
¼ cup unsalted butter, room temperature
1 cup sour cream, room temperature
1 ½ cups white sugar
5 eggs, room temperature
2 egg yolks, room temperature
1 teaspoon lemon zest
2 teaspoons vanilla extract

Preheat oven to 350 degrees.  In a 9 inch spring form pan, rub extra butter all over the inside of the pan, bottom and sides.  Add graham crackers (or cookies), sugar, and salt to a food processor and blend until completely incorporated. Add butter and pulse until blended.  Press crust into the bottom of the spring form pan.  Bake for 10 minutes, until crust is medium brown.  Let cool while making batter. On medium speed, beat cream cheese, butter and sugar in a mixer until completely blended.  Slowly add eggs one at a time until incorporated.  Add lemon zest and vanilla. Beat until completely combined.  Set batter aside. Place spring form pan in the center of 2 layers of foil. Wrap tightly around bottom and sides.  Put in a roasting pan and fill spring form pan with batter.  Make a water bath by pouring boiling water into roasting pan and carefully place in oven.  Bake for roughly 1 ½ hours, until sides set.  Cool completely and refrigerate overnight before serving.


Cream Cheese Frosting:

1 lb. cream cheese, room temperature
1 cup unsalted butter, room temperature
2 ½ cups powdered sugar
2 teaspoons vanilla extract

On medium speed, beat cream cheese and butter in a mixer until completely blended and slightly fluffy.  Add powdered sugar and vanilla.  Beat until completely combined.  Spread or pipe on to cupcakes, cakes or cookies.

Makes approximately 4 cups.
